The Auberge du Presbytere Äponem, located in the French countryside, in a spectacular setting of Vailhan, is a place with unique charm. The up-and-coming chef Amélie Darvas will leave her little paradise to come cook in Montreal with Quebecois products. Dany Bolduc, head of the H4C, will lend his complete brigade and share his knowledge with his guest. A dreamlike journey enhanced by the choices of sommelier Gaby Benicio, a "partner in crime" at the Äponem. Two evenings, two unique experiences.

It is said that this young thirtysomething is gifted. Trained at École Grégoire Ferrandi, after various experiences as an apprentice, she joined Éric Frechon's team at the Hôtel Bristol, where she learned the rigour and rules of French haute cuisine. One experience led to another and she became chef of the Haï Kaï restaurant, on the banks of the Canal St-Martin in Paris, with her “partner in crime”, Gaby Benicio. They eventually left for another extraordinary adventure: The Äponem of the Auberge du Presbytère, in the Hérault region, a restaurant where balance, mastery, inventiveness and aesthetics are at their peak.
