career in the hotel industry, Mattagne, twice starred by the uncompromising Michelin
guide, thrives on travels, conversations, and history.
And though the history of gastronomy has inevitably shaped the destiny of this self-taught
epicurean, so has that of his family upbringing, in a house on the Belgian coast,
where scents of bread toasting on a wood stove hung through the air. Like a writer
of fiction, the inspired head chef creates his own story, his mind overflowing with
images, colours, and faces. Many of his signature dishes are elaborated from the
finest ingredients, always with utmost respect for these, using the most sophisticated
culinary techniques. Constantly striving for superbness, Mattagne creates nothing
less than edible art.
