Alejandro Digilio at Pullman
Chef, restaurant owner and musician Alejandro Digilio is a key figure on the Argentinean culinary scene. Mentioned in Food & Wine Magazine, his restaurant La Vinería de Gualterio Bolívar (Buenos Aires) offers a unique dining experience. Having worked with Ferran Adrià from the famous restaurant El Bulli, Digilio offers a creative and contemporary cuisine combining classical and modern techniques. Always one to favour local products, he will be serving a new version of his tasting menu for these two evenings.

Alejandro Digilio

Alejandro trained at the I.B.A.H.R.S (International Buenos Aires Hotel & Restaurant School) and is a professional cook at the Argentinean Institute of Gastronomy. He began his career in cuisine in Argentina in 1994, later refining and perfecting his art in Barcelona and Paris. Returning to Argentina, he worked as a chef in restaurant Azafrán and completed an internship in El Bullí. He has taught in renowned establishments and was an academic consultant at Ott College. In 2007, he founded La Vinería de Gualterio Bolívar, focusing on evolving and applying new techniques and trends in order to create a conceptual, rational and contemporary cuisine. Alejandro has traveled widely (notably to Colombia and Thailand) to present techniques and concepts in contemporary gastronomy. He has received honours and recognition from prestigious national and foreign magazines and recently represented Argentina at the festival Food and Wine Punta del Este festival.
