Are you ready for the NFL? Combining scientific and humanist approaches with culinary techniques from all over the globe, the Nordic Food Lab imagines a world where diversity and deliciousness share the centre of the plate. Working to expand our range of tastes, generate and adapt practical ideas and methods for those who cook and those who love to eat, this project, conceived in the Food Innovation and Health program at the University of Copenhagen, addresses our experience of food, at three levels: sensorial, biological and semantic.
